Prostanthera incisa also known as Cut-leaf mint bush, is an Australian native mint bush that has been used as a medicinal herb and can be used in cooking, drinks and herbal teas.
Aromatic when the leaves are crushed, hardy with a bushy habit. Endemic throughout NSW along coastlines, sheltered rainforest margis, sclerophyll forests beneath trees and in the Central Tablelands.
The scent is more mentha, with peppery tones, used with vegetatables if vegan or vegetarian, meats include chicken, fish and a variety of other meats. It makes a soothing herbal tea when steeped in hot water. Added to crushed ice, pineapple for a cooling, refreshing drink for those hot summer months.
