Native Mint Bush Infused Olive Oil
A beautifully aromatic infused oil that captures the refreshing minty, herbal notes of Prostanthera incisa. Delicious drizzled over roasted vegetables, potatoes, sourdough, grilled mushrooms, salads, or as a finishing oil.
Ingredients

250 ml extra virgin olive oil

8–12 fresh Prostanthera incisa leaves (or 1 tablespoon dried leaves)

Sterilised glass bottle or jar
Method

Lightly bruise the leaves with the back of a spoon to release their aromatic oils.

Place the leaves into a sterilised bottle.

Pour the olive oil over the leaves until completely covered.
-
Seal and store in a cool, dark place for 7–14 days.

Strain through a fine sieve or muslin cloth.
-
Store in the refrigerator and use within 2–3 weeks, or freeze portions for longer storage.

Blue Tongue Berry Bush Jam
The beautiful purple berries create a vibrant spread that's delicious on toast, scones, yoghurt or desserts.
Ingredients

2 cups ripe Blue Tongue berries
-
½ cup water
-
½ cup raw sugar or honey (adjust to taste)

1 tablespoon lemon juice
-
Method
-
Wash the berries thoroughly.

Place berries and water into a saucepan.
-
Simmer gently for 10–15 minutes until the berries soften.

Lightly mash the fruit.
-
Add sugar and lemon juice.
-
Continue simmering until the mixture thickens.
-
Spoon into sterilised jars while hot.
-
Refrigerate after opening.

Midyim Berry Summer Cordial
Featuring Austromyrtus dulcis (Midyim Berry)
A refreshing native Australian cordial bursting with the delicate sweetness of Midyim berries. Enjoy chilled with sparkling water, over ice, or as a beautiful addition to cocktails and desserts.
Ingredients

2 cups ripe Midyim berries
-
1 litre water
-
¾ cup raw sugar or honey (adjust to taste)
-
Juice of 1 lemon
-
Optional: a few fresh lemon myrtle leaves or a small sprig of native mint for extra aroma
Method

Rinse the Midyim berries gently under cool water.
-
Add the berries and water to a saucepan.
-
Bring to a gentle simmer and cook for 15–20 minutes, lightly pressing the berries with a spoon to release their flavour.

Remove from the heat and allow the mixture to steep for another 20 minutes.
-
Strain through a fine sieve or muslin cloth.
-
Return the liquid to the saucepan and stir in the sugar (or honey) until dissolved.

Add the lemon juice and stir well.

Allow to cool before bottling in sterilised glass bottles.
Store refrigerated for up to two weeks.
